The winery Perelada was founded in 1976, although the castle was acquired by the family in 1923. With the same style, it gathers a winemaking tradition that dates back to the Middle Ages. Perelada is a large and important winery. It produces a wide and complete range of wines, so its production facilities are an example of state-of-the-art winery technology. However, a large part of its work philosophy lies within the land, in the vineyards and in the vines. Therefore, Perelada has several plots of vineyards located in different areas, on different soils and microclimates within D.O. Empordà. Currently, the winery exports to more than 56 countries, and produced in several denominations of origin in the Spanish territory.

This cava was served at the Royal wedding in Spain in 2004 and was Salvador Dali’s favourite! Full of ripe berry fruit, dry, fresh, soft and elegant. Once the grapes are harvested and taken to the winery, they go through a soft maceration with their skins. Then, they fermented in stainless steel deposits, each variety separately.
After the fermentation they carry out the coupage, and the wine is bottled for its second fermentation in the bottle. Here it will rest for a minimum of 12 months. After this time, they perform the disgorgement, and then they add the liqueur d’expédition.

Wine description Colour pale red cherry. Clean and bright. Generous stream of fine bubbles forms crown. Clean fruity aroma with a hint of aging. Complex and fruity, smooth taste, good balance in the mouth.
