The Doublet family has been based in Bordeaux since the end of the 18th century and wine is their passion. Bernard and Dominique Doublet own Château Vignol in the heart of the Entre-Deux-Mers and Château Tour de Calens in the Graves, and their sons Alexandre and Jean-Thomas make wine at Château Saint-Ange in Saint-Émillion. What is special about Château Vignol is that in the 18th century the estate was owned by none other than the political philosopher Montesquieu.
Today the estate is particularly famous for the white Entre-Deux-Mers, but rosé, clairet and red wine are also made. The red Bordeaux is made from a classic red Bordeaux blend consisting mainly of Merlot with some Cabernet Sauvignon and Cabernet Franc. The wine is partly aged in steel and partly in oak, which gives the wine a firmer structure, but retains its fruitiness.

Château Vignol has been in the possession of the Doublet family since the end of the 18th century. Bernard and Dominique Doublet are the current owners of Château Vignol, which is located in the heart of the Entre-Deux-Mers, about 15 kilometres from Saint Emilion.
The vineyards, 7 hectares in total, are planted with 15-year-old vines. The soil here consists of limestone with a top layer of gravel.

Produced by Castillo Perelada, the wine Cigonyes Blanc is primarily a varietal Macabeo, enhanced this time with 9% Sauvignon Blanc. This Spanish white wine from L’Empordà is exclusively crafted from the “free-run” juice. After obtaining the wine must, the Cigonyes Blanc 2024 was fermented in stainless steel tanks at a controlled temperature of 14ºC.
This white wine from L’Empordà was not subjected to oak aging in order to maintain the freshness and quality of the fruit. The name of the wine, Cigonyes (Storks), refers to a successful stork repopulation initiative carried out several years ago by the Castillo Perelada winery.

The aroma evokes red and black fruits, complemented by a subtle blend of refined barrel aging notes. On the palate, it is powerful, refreshing, well-balanced, and exceptionally lengthy.

In the village of Perelada in northeastern Spain, Miguel Mateu, former mayor of Barcelona, bought Castillo Perelada in 1923. The castle turned out to have a long tradition of wine culture: old wine cellars were discovered under the castle, where wine had been made by the Carmelites since the Middle Ages. Miguel’s great dream was to restore this age-old tradition.
Today, three generations later, Castillo Perelada can count itself as one of the most important wine estates in Empordà. Not only Perelada, but also the DO Empordà already has a long wine tradition: the Greeks founded the first vineyards there in the 6th century BC. These vineyards were further cultivated by the Romans and later by the Benedictines. The area is enclosed between the Mediterranean Sea and the Pyrenees and has a Mediterranean climate with mild winters and hot summers.
Donau Veltliner BIO

A cross between Grüner Veltliner and seyval blanc, Donau Veltliner is an Austrian variety that was first bred in 1996 and registered in Lower Austria in 2016. We couldn’t wait to see what the vines could do. Highly resistant to fungi, they were planted in 2018, and since then they have produced excellent, wonderfully balanced wines.
The delicate peppery-spicy aromas typical for Grüner Veltliner are overlaid with a distinct fruitiness – the 2022 vintage has vibrant pear notes. It’s an exciting wine that requires no pest control in ideal growing conditions – and it also delivers a completely new drinking experience.

Over the last 10 years we have made Chenin blanc our main focus at Opstal with our Carl Everson wine being the flag bearer. Our beloved Carl Everson has done most of the heavy lifting, but now we have 2 new Chenin crackers to compliment and show off our estate’s identity and further drive home the message that Chenin feels at home in our soils. We have Chenin planted on different soil types, sites and slopes with further differences in clones and rootstock combinations. In the cellar we have different vessels which we feel goes best with these different types of Chenin juices to best depict the differences mentioned earlier. That brought about the Single Site Series where we celebrate the excellence of Chenin blanc. These are small batch wines, available in limited quantities as we want most of our sales partners and markets to also have some to share in telling the Opstal story.
Estate Cabernet Sauvignon & Cinsault

Stanley, our father, is a huge fan of Cabernet Sauvignon. He has created some stunning red varieties, which are the most traditional in the world. We still like Cinsault now, and our 1997-planted Cinsault vineyards are maturing nicely and yielding excellent grapes. The majority of South African wineries added a tiny amount of Cinsault to Cabernet Sauvignon in the 1970s and 1980s to give it more freshness. Our family has farmed with Chenin Blanc for generations and it forms the cornerstone of our estate, comprising a third of our vineyards. This wine shows the classic Chenin combination of freshness and concentration, which makes it such an attractive and versatile player both on the farm and in the winery. We have the variety planted on various sites on our farm and this is a mash-up of these sites.
