The soil has a low water holding capacity, so we work hard at mulching and composting on the farm to put organic matter back in the vineyard and generate a healthier micro climate for the plant. In the cellar there was only a couple of hours of skin contact during pressing, with a small amount of Colombard grapes added for that lively acidity. The juice underwent extended cold settling before cold fermentation. Aromas of bright red fruit is in abundance with cherry and strawberry most notable.<\/p>\n<p><strong>PAIRS WELL WITH<\/strong><br \/>\nSummer salad l Sushi l Mediterranean foods<\/p>\n<p><strong>SIXPENCE\u2019S STORY<\/strong><br \/>\nSixpence was the nickname given to shepherd Daniel Smiles who looked after the flocks of sheep that roamed our farm in the 1950s and 1960s. Over time the farm increased the amount of land under vine and stopped farming sheep. Vineyards were planted on what had been grazing land, and they have been referred to as Sixpence\u2019s Vineyards ever since. Sixpence\u2019s son, Andries retired in 2010, after 35 years of service to Opstal. The Sixpence range is a tribute to not only Sixpence, but all the legends that have worked on Opstal. With third generation workers living and working on the farm, we are proud to honour those that have helped to make Opstal a success.
